Shrimp Scampi
Ingredients:
*1/2 lb whole wheat pasta
*2 tablespoons EVVO
*2 cloves garlic
*1/4 cup diced red onion
*1 lb shrimp, peeled and deveined
*Sea salt
*Pepper
*1/4 cup dry white wine
*Juice of 1 lemon
*parsley
Directions:
*Boil water and add pasta. Boil for about 6-8min,
until the pasta is not quite done. Drain the pasta.
*In a large skillet add 1 tablespoon of EVVO over medium heat. Saute the onions and garlic for about 3-4 min.
*Add shrimp to skillet and sprinkle with salt and pepper for taste. Cook shrimp until they turn pink for about 3-4 min.
*Remover shrimp from skillet and place in a bowl and off to the side
*Add white cooking wine and lemon juice to skillet and bring to a boil. Then add 1 tablespoon EVVO
*Return shrimp to skillet along with the pasta. Toss together and add parsley. Sprinkle with salt and serve.
